Chef Sunil Ghai of Pickle restaurant Dublin and Tiffin in Greystones is passionate about sharing authentic North Indian cooking with his diners, and in this masterclass he will share the fundamental skills and techniques of Indian cooking and spices with his fellow chefs, providing participants with greater insights into Indian flavours and dishes, but also inspiration and skills to incorporate spices and techniques into your cooking in general.

This is an interactive masterclass that will explore ingredients and spices, flavours and aromas, tricks and techniques, discovering how these are used with varying results across the cuisines of India, taking you on a trip to the hill stations of Kashmir, the shores of the magisterial Ganges at Varanasi, the pink city of Jaipur, and the bustling street food stalls of Delhi.

This masterclass led by Sunil Ghai will cover a wide range of ingredients and techniques including roasting & grinding spaces, marinading, balancing spices and flavours, tempering (tarkha) and more, showcased through finished meat, fish and vegetarian dishes.

  4. Indian cooking techniques for various traditional dishes and the impact of these techniques on flavour, texture etc.
  5. Marinades and cooking techniques for chicken and lamb
  6. Fish curry
  7. Lentils/dhal – varieties and cooking methods
  8. Tarkha/spice tempering
  9. Pickles and accompaniment

WHAT YOU WILL LEARN

Students will learn about:

  • Techniques and processes for cooking with spices
  • Traditional Indian cooking techniques & skills that can be applied in your cooking
  • Authentic regional Indian dishes
  • Spices that pair well with different meats & fish and why
  • How different marinades flavour & tenderise the meat and contribute to the finished flavour
  • Different varieties of lentils, how they are prepared and flavoured including the technique of tempering (tarkha)
  • Rice cooking technique.

STRUCTURE/FORMAT OF THE MASTERCLASS

This is demo-style but highly interactive. You will have the opportunity to see, touch, taste & smell a range of products and the workshop will include a demonstration of techniques used in preparing the final dishes.

Questions and interaction are welcome as each area is covered, there will be an opportunity to taste and smell the examples and the recipes demonstrated.

Please bring a notebook to take your own notes. This masterclass will focus on a range of techniques rather than specific recipes.

Sunil Ghai is the founder and owner of Pickle Restaurant & Tiffin in Dublin. Born in Gwalior in central India, Sunil first gained experience in cheffing with the world-famous 5-star Oberoi hotel group. Sunil has garnered an impressive array of awards, and fans, for his bold, contemporary cooking style.
