Apple, Walnut and Mustard Roast Rack of Pork Recipe

What You’ll Need:
- 1 Pork Rack
- 80g of Crushed Stewed Apples
- 80g of Whole Grain Mustard
- 3 Finely Chopped Sprigs of Rosemary
- 250g of Chopped Walnuts
- 2 Finely Crushed Cloves of Garlic
- 50g of Butter
- 10 Cooking Apples
- 150ml of White Wine
- 150ml of Maple Syrup
- 300ml of Chicken Stock
- Salt and Pepper to Taste
Creating The Dish:
Peel and cut the apples in quarters.
In a large pot, melt the butter on medium heat.
Place the apple quarters and sear for 2 minutes.
Add in the white wine and reduce by half.
Add in the maple syrup and bring to the boil.
Add in the chicken stock, bring to a simmer and remove from heat.
Leave to cool down.
In a bowl, mix the crushed stewed apples, mustard, walnuts, rosemary and garlic. Add in to the apple and wine mix.
Mix thoroughly to get a thick glaze.
Season the whole rack of pork with salt and pepper.
Sear both sides on medium heat sides until golden brown and leave to cool down for 10 minutes.
Spread the glaze all over the rack of pork, ensuring it’s well covered, to create a nice crust.
Cook the pork rack at 170°c for 60 to 80 minutes.
Cover half way through if the crust is getting too dark.
