Sausage and Chestnut Stuffing Recipe

What You’ll Need:
- 300g of Fresh Sausage Meat
- 200g Of Cooked Peeled Chestnuts
- 50g of Honey
- 20g of Butter
- 100ml Of Chicken Stock
- 1 Onion Very Fine Chopped
- 20ml Of Olive Oil
- 20g of Fine Chopped Chives
Creating the Dish:
In a pan, sweat the finely chopped onions with a little olive oil until soft and see through.
Leave to cool down
In a pot place the cooked chestnuts with the honey, chicken stock and butter.
Cook the liquid off and leave to caramelise until golden brown.
Leave to cool down and roughly chop the chestnuts once cold
In a bowl, place the sausage meat, chopped chives, chopped chestnuts and cooked chopped onion
Loosely pack the stuffing in the cavity of the turkey and/or alternatively, roll the sausage meat into tin foil to make sausages.
