Smoked Mackerel Rillettes with Rosemary Scented Grilled Sourdough Bread Recipe

What You’ll Need:
- 150g of Smoked Mackerel
- 30g of Butter
- 65g of Natural Yoghurt
- 5g of Chopped Chives
- 1 Lemon
- Salt And Pepper
- 4 Slices of Good Sourdough Bread
- 10ml of Extra Virgin Olive Oil
- Fresh Rosemary
- Flake Sea Salt
Creating the Dish:
In a large bowl, soften the butter.
Mix in the natural yoghurt.
Remove the skin of the smoked mackerel fillets and flake the fish in the butter yoghurt mix, while checking for bones.
Add in the chopped chives and lemon juice.
Mix thoroughly using a fork, to keep the filament texture.
Season with salt and pepper.
Brush the sourdough with olive oil.
Chop the rosemary and sprinkle over the bread.
Grill on both side for a few minutes.
Serve warm with the mackerel rillettes.
