Authentic Falafel Recipe

Although street food is not a new notion, there’s no denying its popularity has reached new heights over the last few years. There’s an exciting revolution happening in food, partly due to the demand for a relaxed, inexpensive dining experience and indeed street food satisfies this demand.
This Middle Eastern recipe is from our colleague Tarek, served with our Lebanese quinoa tabbouleh.

INGREDIENTS

  • 1kg of chick peas
  • 1 medium onion
  • White of 1 leek
  • 1 bunch of coriander
  • 1 bunch of flat parsley
  • 4 cloves of garlic

METHOD

  • Soak the chick peas over night
  • Place all ingredients in a large food mixer and blend until it all holds together
  • Refrigerate for one hour
  • Add one pinch of bread soda diluted in a little water into the mix before frying, it will lighten up the falafels
  • Fry for a couple of minutes
  • Serve with hummus, mint yoghurt sauce and our quinoa Lebanese tabbouleh
